    Banchan + Yuzu rice wine cocktail Complimentary tofu curd 韩国菜一直不算我的go-to cuisine,但这并不代表人家没价值。 今天写的这家韩餐就是一颗璀璨的珍珠,是muxi离开美国之前托付给我的 – 豆腐屋(Cho Dang Gol)。 豆腐屋从1997年开始便背负起了在纽约每日出品新鲜豆腐的使命。店家会赠送每位食客小碟的原味豆渣。清甜细腻的凝乳状豆花看似低调,却自成一派,如同一个大佬在开口讲话之前先撩起袖子亮出纹身给你看。 Makgeolli Moromi sake 开胃小菜先吃起来 – 泡菜水拌的茄子、奶味南瓜泥、麻将豆腐、剔透的玉米饼,个个用心。 每次看见这碟碟不重样我的酒兴就会被唤起。调酒固然芬芳,但我偏爱质朴的大盅米酒。准确来说是浊米酒,在韩国叫makgeolli(梨花酒),据说是有雅趣的人在下雨天吃绿豆煎饼时喝的。又让我想起前几周在清酒精酿馆尝到的日本moromi,更加馥郁和悠远的一杯,有一斗合自然的意思。 Makgeolli呈云色细甜带浅泡,度数低,速醉是不可能的,但为兴味就刚好。所以说醪类都属于善酿,是充满善意的酿造~ Mini bossam 豆腐屋特别适合二到四人用餐,小菜辅佐大菜一二就很巴适。 我点菜遵循的几个基本原则 – 荤素搭配,干湿交替,轻重平衡,在这里可以找到无数种解。 净切猪五花虽是招牌,却未曾令我留恋。煮肉味寡,同一些酱菜包进绿叶子里,吃上一件我就无聊了。 Cho dang pancake – Seafood and scallion Cho dang pancake - Kabocha and potato 既然说注重干湿,由于通常肯定会点豆渣锅,那就经常一定翻煎饼的牌子。 葱香海鲜饼已优于ktown几个街区内的数百家食铺。能够清晰的感受到各食材的丰满性格,在和面糊结合后也不油不粉。 更出众的是南瓜饼,烙到位后还多出一份南瓜的香甜软糯,真好。 CDG Fried Chicken + Radish pickles 前菜里我点过最多次的其实是韩式炸鸡块。单这一道菜就满足了我的三个原则 –
