Hands-down, without question, one of my favorite Italian restaurants in LA.
FK’s have a pretty approachable drink list. We thought it can not be a bad idea to start with some prosecco.
Pizzata – crescenza, san marzano tomato, capers, anchovies, oregano
According to our server, the pizzata was made based on a secret recipe originated from Italy. One bite with some sun-drenched san marzano tomatoes, my tastebuds just sang. The crust was delicately thin but not soggy at all.
Egg~pasta, parma prosciutto 24 months, light reggiano cream sauce
Here’s a light detection of saltiness derived from the prosciutto inside, which actually elevated the creaminess of buttery sauce. Good pasta can be the most fundamentally satisfying of all food.
corxetti stampati – hand stamped marjoram infused egg~pasta, braised veal, tomato
The pasta pilgrimage continued. No nonsense.
Handkerchief pasta ligurian almond basil pesto, fiore sardo
This was the best entrée at the table in my opinion! The paper thin sheets of pasta was al dente.The pesto sauce was dreamily silky. And my pinot noir went down easy with it.
Cannoli – ricotta filling, pistachios, orange marmalade
So much effort put into two bites of food.
“The Factory Kitchen is what you do before you do the next thing, only you never do the next thing” according to some yelper. I want to dig this place!
